What a wonderful Easter we had!
We started the morning with an Easter egg hunt.
Then searched for the Easter Treasure Box (which included a scripture for each child).
Then we ate our Easter Resurrection Rolls (They were empty! Just like the tomb of Jesus!) - and best part was they tasted like donuts! :)
Now, getting a good family photo was, well, impossible, so here's the best I could do!
Easter Resurrection Rolls
1 pkg. Rhodes frozen bread dough rolls
24 lg. marshmallows
melted butter
sugar & cinnamon mix
Thaw 24 rolls. Flatten a roll to about 3" in diameter. Place a large marshmallow in the center of the dough and pinch it together around the marshmallow. Roll in the palm of your hand into a dough ball. Dip in melted butter, then sugar/cinnamon mix and place on a greased cookie sheet. Let them rise until doubled (30-60 min). Bake at 350 degrees for 15-20 minutes until golden brown

Good Messy Saturday!

It was a messy Saturday, but we wouldn't have it any other way.
Nothing 1 or 2 baths a day, per child, can't fix!

Good Friday
HOT CROSS BUNS (a new Good Friday tradition at our house!)
Ingredients
1 T active dry yeast
1-1/2 cups warm 2% milk (110° to 115°)
1 cup canola oil
4 eggs
2 eggs, separated
3/4 cups sugar
2 teaspoons ground cinnamon
1-1/2 teaspoons salt
1 teaspoons ground cardamom
6 to 8 cups all-purpose flour
1-1/3 cups raisins
1 teaspoons water
ICING:
3 cups confectioners' sugar
2 tablespoons butter, melted
4 to 5 tablespoons 2% milk
Directions
In a very large bowl, dissolve yeast in warm milk. Add the oil, eggs, egg yolks, sugar, cinnamon, salt, cardamom and 5 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough. Stir in raisins.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours.
Punch dough down. Turn onto a lightly floured surface. Cover and let rest for 10 minutes. Divide into 35 pieces; shape each into a ball. Place 2 in. apart in four greased 15-in. x 10-in. x 1-in. baking pans. Cover and let rise in a warm place until doubled, about 40 minutes. Combine egg whites and water; brush over rolls.
Bake at 375° for 12-15 minutes or until golden brown. Remove from pans to cool on wire racks. For icing, combine the confectioners' sugar, butter and enough milk to achieve desired consistency. Pipe an "X" on top of each bun. Yield: 3 dozen.
